Process Description / Working Principle

1. Preparation: Fresh coconuts are dehusked, shelled, and pared to obtain clean white coconut kernels.

2. Washing & Blanching: The kernels are washed thoroughly and blanched to deactivate enzymes and ensure microbial safety. 

3.  Shredding: The blanched kernels are shredded into fine or medium flakes as per requirement.

4Drying: The shredded coconut is dried in a hot-air or fluid bed dryer at controlled temperature to reduce moisture to below 3%.

5.  Cooling & Sieving:The dried product is cooled and sieved to achieve uniform particle size and texture.

6.  Packaging: The desiccated coconut is packed in moisture-proof bags or pouches to preserve freshness and prevent contamination.
